Two Grilling Recipes: Bacon Wrapped Chicken and Grilled Quinoa Flatbread

Nice weather has finally arrived, and we are all busier than bees around here!  But we always have time to fire up the grill!

These two recipes are so simple and fast to make, that grilling can even become doable on a weeknight.  However, if you don't feel like firing up the grill, they can also be modified for the oven and stove.

Bacon-Wrapped Chicken


4 boneless chicken breasts
8 slices bacon
2 tablespoons maple syrup or warm honey
1 teaspoon chili powder
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon cayenne pepper

1.  Wrap each chicken breast with two slices of bacon, securing with toothpicks if desired.

2.  In a small bowl, whisk together the maple syrup and remaining spices to make the glaze for the bacon-wrapped chicken.

3.  Using a basting brush, brush the glaze onto the bacon-wrapped chicken, coating both sides.

4.  Grill over medium-high heat for 8 to 12 minutes, turning once halfway through cooking.

5.  Allow chicken to rest for 5 minutes before serving.  Grilling is hard work after all.

***To cook the chicken in the oven, place your oven rack in its highest position, and preheat on broil.  Place the bacon wrapped chicken on a broiling rack.   Broil for 8 to 12 minutes, turning once halfway through cooking.***

Grilled Quinoa Flatbread

This recipe calls for the quinoa to be soaked for at least 6 hours, so it is best to start it soaking in the morning in order to have it ready by dinner time.


1 cup quinoa
3 cups water
2 tablespoons apple cider vinegar
1 egg
1 tablespoon olive oil
1 teaspoon honey or other sweetener
1 tablespoon coconut flour
1 teaspoon salt

1.  In a quart jar or large bowl, combine the quinoa, water, and vinegar.  Cover, and allow to soak for at least 6 hours.

2.  Drain quinoa and rinse well.

3.  Place quinoa in a large bowl.  Using an immersion blender, blend the quinoa until it forms a paste.  Alternatively, you can puree the quinoa in a food processor.

4.  Add remaining ingredients, and blend well.

5.  Place a lightly greased, large cast iron pan over hot coals and allow it to heat.

6.  Drop a spoonful of dough into the pan, and smooth into a circle using the back of a spoon.  You may be able to fit several circles into one pan.

7.  Cook for one minute, or until bottom begins to slightly brown, and then flip and cook for another minute.  Remove from pan and keep warm. 

8.  Serve warm with plenty of butter and honey if desired.

***The quinoa flatbread can be cooked on the stove top.  Just preheat your cast iron pan over medium heat, and proceed as for grilling.***
